I hate to brag, but I make an amazing alfredo sauce. I’m going to go ahead and say it is the most amazing alfredo sauce ever – and every time I have served it, I am told it is the best ever.
All I hear is how horrible alfredo sauce is for you, because of the cream and butter and parmesan cheese, but if you are a NT foodie, you know this is actually a very healthy and nutrient dense dish if you use raw cream and butter, with very high quality cheese! I will eat it with anything (and so will my husband!), but we typically do alfredo sauce over bacon, chicken (or rabbit), spaghetti squash, and assorted veggies. DELISH!
Here it is. You will thank me someday.
Brown Butter Alfredo Sauce
1/2 cup raw grassfed butter
2-3 cloves garlic, chopped
2 cups raw cream
1 1/2-2 cups shredded high quality parmesan
Real Salt/pepper to taste
On low heat, melt your butter and very SLOWLY sweat your chopped garlic in the butter until the butter solids and garlic begin to turn light brown. This may take anywhere from 20-30 minutes (and is optional if you are in a hurry – simply saute your garlic till golden brown if you don’t want the brown butter), and results in the most delicious brown butter flavor! Once browned, pour in your heavy cream and bring up to a slow simmer, stirring occasionally so it doesn’t stick to the bottom/sides and so it emulsifies. Add some salt and pepper at this stage (about a teaspoon each is what we do). While this heats, shred your cheese. After about 10 minutes, begin adding your cheese to the sauce a little at a time, whisking vigorously so the cheese melts as you add it. Make sure you are just sprinkling the cheese as you whisk it in so you don’t get clumps. If you add it slowly enough, it will result in an luxuriously rich, smooth sauce. Let it cook a few minutes more, stirring occasionally, and taste for salt/pepper. When finished, pour over chicken, roasted veggies, spaghetti squash, shrimp, or even fish!
This is a very rich sauce – you don’t need much! It has so much flavor, is incredibly creamy and so versatile. It is easy to reheat (just pour in a pan and whisk over medium heat), and stores well. I hope you enjoy it as much as our family does!
