Delicious Paleo Flapjacks Recipe {Grain-Free, Gluten-Free, Sugar-Free}

When I moved to Paleo foods, I was so disappointed that I couldn’t enjoy pancakes, belgian waffles, and french toast for breakfast anymore. But that is only because I didn’t know that it is incredibly easy to make healthy flapjacks (and waffles and french toast!) that are Paleo-friendly!

But The Almond Flour Sweet Treats Cookbook to the rescue! This is one of the many breakfast recipes in my book, and it is simple, delicious, and definitely able to “fool” others into thinking they are eating traditional pancakes!

Enjoy these pancakes topped with raw butter, real maple syrup, fresh fruit, freshly whipped sweet raw cream, coconut butter, fresh preserves, or even raw honey! They whip up in no time, and definitely satisfy my sweet tooth on Sunday mornings.

These delish pancakes are dairy free, gluten free, grain free, and sugar free! They are sweetened with applesauce, loaded with protein from the eggs, almond butter, and almond flour, and super easy to add fun stuff like blueberries, coconut flakes, or even chocolate chips if you are feeling really daring! Paleo Flapjacks

(Recipe from The Almond Flour Sweet Treats Cookbook: Favorite Paleo Desserts)
Makes 4 regular-sized flapjacks

Ingredients:
4 pastured eggs
1 cup unsweetened applesauce
1 cup raw almond butter
½ teaspoon ground cinnamon
½ teaspoon vanilla extract
½ cup blanched almond flour
Coconut oil for frying

Instructions:
Preheat your skillet to medium low heat. Mix all ingredients (except the coconut oil) in a bowl until smooth. Grease your skillet with about a teaspoon coconut oil and swish it around so it coats your skillet completely. Pour batter into pan just like you would when making traditional wheat pancakes and cook over low/medium heat. Flip after about a minute, being careful not to burn them. Top with fresh strawberries, blueberries, whipped cream, maple syrup, butter, honey, or any other favorite flapjack toppings.
